Pies
6 cups sliced peeled peaches
2/3 cups sugar
2 tablespoons all-purpose flour
1/4 teaspoon mace
1 tablespoon butter
Cream and granulated sugar
Line a 9-inch pie plate with pastry.
Toss peach slices with sugar, flour and mace. Carefully place in pastry-lined pie plate, making sure there are no large air spaces; dot with butter. cover with top crust; seal and crimp edges. With sharp knife, cut a few slashes for steam to escape. Brush with cream and sprinkle with sugar for a glazed top.
Bake in 450 F oven for 10 minutes. Reduce heat to 375 F and continue baking for 35 to 40 minutes or until fruit is tender and crust is golden brown. If pie edges brown too quickly, cover edges with foil wrap.
